School-Level Practices to Increase Availability of Fruits, Vegetables, and Whole Grains, and Reduce Sodium in School Meals — United States, 2000, 2006, and 2014
学校給食における果物、野菜および全粒穀物の増量と塩分低減に関する学校レベルの現状 ― アメリカ、2000年、2006年および2014年
2012年、アメリカ農務省(USDA)は学校給食に関する新しい栄養基準を発表、この新しい基準では果物、野菜および全粒穀物を増やし、10年以上にわたり塩分含量を徐々に減らすことが求められている。今回、CDCは学校給食の果物、野菜、全粒穀物および塩分に関する2000年、2006年、2014年のSchool Health Policies and Practices Studyデータを分析した(分析対象校は2000年:841校、2006年:944校、2014年:554校)。2014年、全粒穀物を毎日朝食に出している学校は97.2%(小学校:98.4%、中学校:98.8%、高校:93.1%)、昼食に出している学校は94.4%(それぞれ94.2%、94.1%、95.5%)であり、昼食に2種類以上の生野菜を出している学校は79.4%(79.5%、78.0%、80.9%)、2種類以上の果汁100%のジュースを出している学校は78.0%(74.9%、77.2%、86.8%)、また、セルフサービスのサラダバーのある学校は30.5%(28.6%、31.2%、34.7%)であった。減塩に関しては、缶入りの野菜の代わりに生または冷凍野菜を使用する学校が54.1%、塩分量の少ない缶入り野菜を使用する学校が51.8%、塩の代わりに他の調味料を使用する学校が65.1%、さらにレシピの塩分量を減らす、または低塩レシピを使用する学校が34.1%認められた。これら9つの対策のうち、少なくとも1つの対策を実施する学校は97.5%であり、1~3対策:23.9%、4~6対策は48.3%、25.3%の学校は7対策以上を実施していた。また、2000年および2006年において昼食に2種類以上の生野菜を出している学校は68.1%、66.3%、2種類以上の果汁100%のジュースを出している学校は68.1%、66.3%と2014年に比べ有意に少なく、減塩に関する対策の実施校も2014年に比べ有意に少なかった。以上、2012年以降、新しい栄養基準への対策を実施する学校が全国的に増加していることが示された。
